These guys are wild picked local mushrooms from New Mexico mountains. Our porcinis this week are from the Santa Fe National Forest – but our source won’t share any more details of his secret spot! They’re not only delicious, but extremely rare, which is why Chef Jaye is sooooo excited to have had them two weeks in a row.

Thank you, July monsoons!!!! The porcini mushrooms have a big, steak-like flavor and feel, so Chef Jaye is grilling them up just like a steak and serving them with arugula greens, cucumber, and thyme. They are something really special, and we’re so lucky to be serving them tonight. Come try one!
